Black Beans with Exotic Fruit

  • One 15-ounce can black beans, drained and rinsed (or 1 3/4 cups cooked black beans)
  • 1/2 teaspoon minced garlic
  • 2 tablespoons extra virgin olive oil
  • 1/2 t ground cumin
  • 2 T minced red onion
  • 2 T fresh lemon juice or lime juice
  • 1/3 cup chopped mango, lychee, or pineapple
  • 1/4 cup chopped red bell pepper
  • 1/4 t salt, or to taste
  • cayenne

Yield: 3 servings

Per serving: 231 cals / 9g protein / 9g fat / 9g fiber
